“This Sandwich is Good but it is Filling…”

Hello World,

I come to you with the intent on spreading the word on delicious recipes, restaurants and just food in general. Many of my posts will be found in the food category but don’t be surprised if you find a post here or there in our other areas. I am a big fan of cooking, baking and mixing up dishes but also try and keep things simple so hopefully these blogs will fill you up with some useful knowledge in the kitchen.

So to start things off, I guess its only fitting to post a panini recipe… this is really easy and very yummy – enjoy!

Caprese Panini

Ingredients

  • 2 slices of bread (Sourdough, Italian or a Ciabatta are great)
  • 3-4 slices Vine-ripened tomato
  • 3-4 slices Fresh Mozzarella
  • 4-5 Large leaves of fresh basil hand torn
  • 1 Clove Garlic
  • 1 Tbs Extra Virgin Olive Oil
  • Kosher salt & freshly ground black pepper to taste

Directions: *Preheat your panini press or George Forman Grill (GFG) (If you don’t have one – no worries, get out a small frying pan and set it to medium!)

  1. Lightly toast the slices of bread (enough to just warm them up – not brown)
  2. Cut one end of the garlic clove and rub on both slices of toasted bread (This is why you toast the bread a little, makes it easier to rub the flavor in)
  3. On one slice of bread start to layer the mozzarella, basil and tomato
  4. Drizzle some of the olive oil on top and season with salt and pepper
  5. Top panini with 2nd slice of bread
  6. Drizzle with remaining olive oil
  7. Place on panini press or GFG and close until golden brown (If using frying pan – place panini in pan and place light pressure with spatuala until side is golden brown – flip and repeat!)
  8. Enjoy 🙂
